Speaking The Language Of Spice
The Bombay Brasserie restaurant at the 5star hotel, Taj Cape Town, was taken over by Chef David Tilly last July. Originally from Brittany, France, where he was first trained, Chef Tilly arrived in Cape Town after 11 years at other Taj properties in London, New Delhi & Marrakech.
He joins a team of 4 other chefs that already set Bombay Brasserie to be one of the best Indian cuisine options in the city, bringing aspirations from Michelin star restaurants, London’s Quilon and Chutney Mary, as well as Indian street food.
Tilly is enchanted with the South African food scene and finds the braai besotted culture extremely appealing. Now managing the Bombay Brasserie, along with Taj Cape Town’s Mint and Twankey Bar, he’s settling in and has some exciting upcoming changes in mind, without compromising the authentic flavours Bombay is famed for.
Diners should expect a fusion between old & new, local ingredients formed in surprising combinations and picture-perfect plating while achieving a mouthful of flavours in every creation. The current menu includes dishes like Crab Puri & Mango Pachadi, Apricot and Potato Tikki cakes – a variation of the popular North Indian street snack, Sweet Pickling Oysters, Malay Octopus Ceviche, Salmon & Caviar Quail Egg Mimosa, Pesto Tandoori Prawn, Ceps & Truffle Chicken Tikka, Courgette Flowers & Biltong Poppers and Masala Chai Éclair. Vegetarian options include Dahi Puri and Cinnamon Fermented Raspberries & Champagne. The dessert menu upholds some fusion surprises too.
Located in the St George’s Mall district, the Taj Hotel offers a complete inner city experience. Guests are located in walking distance from all major tourist attractions as well as some of the best boutiques and designers’ studios. These reasons makes the hotel a favorite pick for a staycation even for Capetonians that just want to step out of their comfort and indulge in a dreamy zone.
The hotel occupies two historic buildings, beautifully preserved, allowing an elegant backdrop to all current luxuries expected from a well-established global chain.
